Smoked Salmon & Tagliatelle
Dinner for two
1 small onion finely chopped
100g mushrooms chopped
100g smoked salmon trimmings
1 lemon juiced & zested
2 tbs chopped chives
Put the tagliatelle onto cook as directed on the packet
Fry the onion gently till cooked but don’t let them brown
Add the mushrooms and gently cook
Stir in the mascarpone
Add the salmon, lemon juice and half of the chives
Season with salt & pepper.
If the mixture is too thick add a little milk or cream
Drain the pasta and return to the pan
Pour over the smoked salmon mixture and mix together
Serve scattered with the rest of the chives and lemon zest.
This recipe works well with other types of pasta and you can add a handful of prawns!
