Galley crew continues to tickle the taste buds


In these very different times and while we sit back in self isolation the Galley crew offer a few idea’s to keep your spirits up and boredom down. A time to bake and cook, using those hidden culinary skills and enjoying the fruits of your labour, while being mindful of the need to exercise. Getting out into the garden, diva sitting moves and often raising arms to enjoy your chosen tipple……cuppa, chilled drink or something stronger!!

So here goes, try these and if you would like to, let us know how it all went.

The Galley Crew


Peanut butter and Jam Flapjacks.

Ingredients

5 tbsp salted butter plus extra for the tin. 250 grms crunchy peanut butter, 8 tbsp strawberry Jam, 80 grms light brown soft sugar, 200 grms rolled oats.

Method:

Butter and line with parchment paper a 20cm square cake tin or tray.

Save 3tbsp of jam and peanut butter and put to one side

Tip rest of the jam and peanut butter into a bowl, butter and brown sugar into a pan, heat gently and stir until everything has melted together.

Quickly add the Oats and combine well, then leave to cool for 5 - 10 minutes.

Spoon the mixture into the prepared tin and press down with your hands. Dot over the reserved jam and peanut butter, then bake in a preheated oven at 180C (160C in a fan oven) or gas mark 4 for 20 to 25 minutes until golden.

Leave to cool completely in the tin and once cool, turn out onto a board and cut into squares. Enjoy with a cuppa.


Galley tip: Use 2 -3 ripe banana's instead of jam, adding them with the oats. Replace Jam with 1-2 tbsp of golden syrup to taste.
