Baked Corned Beef Hash
Tin of corned beef,kept in the fridge overnight, cut into chunks, 600g potatoes, peeled and cut into chunks, 2 leeks trimmed and sliced or medium 1 onion chopped, 2 tbsp tomato puree,
2 tsp Worcestershire sauce,10g butter,
2 tbsp milk,Tin of baked beans,
100g Cheddar cheese grated,
Salt and freshly ground black pepper.
Preheat oven to 180C, fan oven 160C, Gas Mark 4. Cook the potatoes in lightly salted boiling water for 15-20 minutes, until tender. Simmer leeks in boiling water for 10 minutes, or fry onions on a low heat until translucent, about 5 minutes.
Put the chunks of corned beef, tomato puree and Worcestershire sauce in a bowl and stir together gently.
Drain the cooked potatoes and mash them with the butter and milk. Season to taste and add the drained leeks or onions.
Pour the baked beans into an ovenproof dish and spread the corned beef mixture over the top. Spoon on the mashed potato mixture, spreading it out evenly. Sprinkle the cheese over the surface and bake for 30 minutes.
The result will be a store cupboard special for 4.
